OSMOTE PORK
We’re now accepting orders for pasture-raised pork — available by the half or whole pig.
This is a true small-batch operation: the pigs are raised with care on our land from fantastic breed stock originally from Tank Jackson’s farm- Holy City Hogs. Our hogs are largely old line Duroc and Spanish Iberico, making them some of the most unique pigs in New York State. Duroc is prized for its red flesh and rich flavor, and Iberico has fantastic fat marbling, like that you recognize in the prized cured jamon legs from Spain.
We hope you'll enjoy getting to know the source of your pork just as much as we enjoy working together to bring it to your table.
Each order includes a thoughtfully arranged mix of cuts and sausages, ranging in weight from 50 to 120+ pounds, depending on whether you choose a half or whole pig.
